Bacon, Walnut and Apple Salad with Maple Vinaigrette

Ingredients:
6 slices bacon - sliced
1 shallot - peeled and minced (Learn How)
1/4 cup(s) cider vinegar
2 teaspoon(s) Dijon mustard
2 teaspoon(s) honey
2 teaspoon(s) maple syrup (pure)
1/4 cup(s) olive oil
1 pinch salt and pepper - to taste
1 apple - cored and shaved thin on the mandoline
6 cup(s) mixed greens
1/4 cup(s) Parmesan cheese - shaved on the mandoline
1/4 cup(s) walnuts - toasted
Steps:
-Heat a large saute pan to medium and cook the bacon slowly to render off the fat. Save the fat and set the bacon to the side.
-Place the shallots, vinegar, Dijon, honey and maple syrup in a large enough bowl to accommodate all of the salad ingredients.
-Whisk in the oil and 1 tablespoon of the bacon fat. Season to taste.
-Add the apples to the vinaigrette once they are sliced.
-Toss in the greens and add additional seasoning if needed.
-Top the salad with walnuts, parmesan and the reserved bacon.
