Ingredients: | | 6 slices bacon - sliced | | 1 shallot - peeled and minced (Learn How) | | 1/4 cup(s) cider vinegar | | 2 teaspoon(s) Dijon mustard | | 2 teaspoon(s) honey | | 2 teaspoon(s) maple syrup (pure) | | 1/4 cup(s) olive oil | | 1 pinch salt and pepper - to taste | | 1 apple - cored and shaved thin on the mandoline | | 6 cup(s) mixed greens | | 1/4 cup(s) Parmesan cheese - shaved on the mandoline | | 1/4 cup(s) walnuts - toasted | |
Steps: | | -Heat a large saute pan to medium and cook the bacon slowly to render off the fat. Save the fat and set the bacon to the side. | | -Place the shallots, vinegar, Dijon, honey and maple syrup in a large enough bowl to accommodate all of the salad ingredients. | | -Whisk in the oil and 1 tablespoon of the bacon fat. Season to taste. | | -Add the apples to the vinaigrette once they are sliced. | | -Toss in the greens and add additional seasoning if needed. | | -Top the salad with walnuts, parmesan and the reserved bacon. |
