Use leftover short rib or pot roast meat, or plan in advance to cook the braise for this recipe.
Ingredients:
2 cup(s) stock - (beef, chicken or vegetable)
1 1/2 pound - braised short rib meat - or pot roast
1/2 pound green cabbage - julienned
1 carrot - peeled and julienned on the mandoline
1 tablespoon(s) scallions - minced
1 tablespoon(s) rice wine vinegar
2 tablespoon(s) olive oil blend
2 tablespoon(s) blue cheese - crumbles
1 tablespoon(s) parsley (Italian) - chopped
1 pinch salt and pepper - to taste
6 - slider buns
Steps:
-In a saute pan, heat up the meat slowly in stock.
-Mix the cabbage, carrots and scallions together in a bowl.
-Toss them with the vinegar and oil.
-Fold in the blue cheese and the parsley.
-Season the slaw to taste.
-Toast the slider buns and top with drained short rib meat.
-Top the meat with the slaw.
