This dish is traditionally served with a raw egg yolk on top, but this recipe has it mixed in.
Ingredients:
8 ounce beef tenderloin - hand sliced
2 teaspoon(s) cornichons - minced
2 teaspoon(s) capers - minced
2 teaspoon(s) shallots - peeled and minced (Learn How)
2 teaspoon(s) parsley (Italian) - minced
2 teaspoon(s) garlic - peeled and minced (Learn How)
2 teaspoon(s) Dijon mustard
1 egg yolk
1 teaspoon(s) Worcestershire sauce
1 dash Tabasco
1 pinch salt and pepper - to taste
1 teaspoon(s) olive oil
Steps:
-Shave the meat paper-thin against the grain. Go back and dice the meat the same way.
-Place the meat in a stainless bowl over another bowl with ice to keep the meat as cold as possible.
-Mix all of the other ingredients in a bowl large enough to accommodate the meat .
-Add the meat and mix all with a fork slightly mashing the ingredients together.
Serve with toast points and garnishes of your choice.
