This is a Midwestern canning staple. Allow time for leaching the vegetables overnight.
Ingredients:
1/2 head green cabbage - medium diced
6 green tomatoes - medium diced
4 onions - peeled and medium diced
3 tablespoon(s) kosher salt
6 cup(s) cider vinegar
2 cup(s) sugar
1/2 tablespoon(s) dry mustard
1/2 tablespoon(s) turmeric
1/4 teaspoon(s) red chile flakes - ground
1 pinch salt and pepper - to taste
1 red bell pepper - seeded and brunoise (Learn How)
1 yellow bell pepper - seeded and brunoise
1 jalapeno pepper - halved
Steps:
-Toss the cabbage, tomatoes and onions with the salt, and place in a colander.
-Place a bowl underneath the colander and allow the salt to leach the water out of the vegetables overnight. Rinse and drain the next day.
-Bring the the vinegar, sugar and spices to a boil, and add the leached vegetables.
-Add the peppers and simmer for 15 minutes.
-Season to taste.
-Keep in the refrigerator for a week or follow canning procedure.
