Ingredients:

1 small fennel bulb - shaved paper thin
2 small radishes - shaved paper thin
1 jalapeno pepper - seeded and thinly julienned
2 tablespoon(s) rice wine vinegar
1 pinch salt and pepper - to taste
1 tablespoon(s) olive oil
1 tablespoon(s) chives - thinly sliced
1 tablespoon(s) mint Leaves - torn into small pieces
1 tablespoon(s) cilantro leaves
Steps:
-Mix the orange segments (with their juice), fennel, radishes and jalapeno together.
-Add the vinegar to the bowl. Slowly drizzle in the oil while gently mixing.
-Season to taste.
-Add the herbs just before serving.
