Steps: |
| -In a saute pan, heat up the butter slowly over low heat. Just as the butter melts, add the leeks and stir to coat with butter. |
| -Cook the leeks over low heat until they start to soften. Add the shallots and cook for 3 minutes more. |
| -Place the goat cheese and cream cheese into a large bowl. |
| -Add the orange zest to the saute pan and stir. |
| -Add onion mix to cheese. The heat from the onions will make it easier to combine all of the ingredients with a spoon. |
| -Add the chives and season to taste. |
This can be served at room temperature as a dip or baked into pastry shells at 400 degrees for 5 minutes. |
