This recipe works best with ripe, summer yellow or white peaches.
Ingredients:
1/4 cup(s) rice wine vinegar
1 tablespoon(s) lime juice - fresh
1 tablespoon(s) guava - paste
1/4 cup(s) scallions - minced
1 tablespoon(s) jalapeno pepper - seeded and brunoise (Learn How)
1 cup(s) tomatoes - small diced
1/4 cup(s) fennel - small diced (Learn How)
1/2 cup(s) cucumber (English) - small diced
2 cup(s) peaches - pitted and diced
1/4 cup(s) olive oil
1/4 cup(s) cilantro leaves - (mint) or both
1 pinch salt and pepper - to taste
Steps:
-Whisk together the rice wine vinegar, lime juice and quava paste.
-Add scallions, jalapeno, tomatoes, fennel, cucumber and peaches in order.
-Add the oil, cilantro, salt and pepper; toss gently, being careful not to mash the peaches.
Serve over chicken, tuna or grilled scallops.
