Ingredients:
1 tablespoon(s) vegetable oil
1 1/2 tablespoon(s) ginger - peeled and minced (Learn How)
1 garlic clove - peeled and minced (Learn How)
1/4 cup(s) tahini
1/4 cup(s) peanut butter (smooth)
2 tablespoon(s) soy sauce
2 tablespoon(s) rice wine vinegar
1 tablespoon(s) sugar
1/4 teaspoon(s) red chile flakes
8 ounce udon noodles - cooked and tossed with sesame oil
1 cucumber - peeled, seeded and julienned
1/4 cup(s) peanuts - roasted and chopped
2 tablespoon(s) cilantro leaves
1 lime - quartered
Steps:
-Heat up a small pot over medium-heat, and then add the oil.
-Add the ginger and garlic and saute for 4 minutes.
-Reduce the heat to medium-low and whisk in the tahini, peanut butter, soy sauce, vinegar, sugar and red chile flakes.
-Heat and whisk for 15 minutes. (Thin out with water if too thick)
-Toss the noodles with the sauce and place in bowls.
-Top with the cucumbers, peanuts and cilantro leaves.
-Garnish with lime wedges.
