Ingredients:
3 large potatoes (Idaho)
2 tablespoon(s) olive oil
2 tablespoon(s) kosher salt
1 cup(s) bacon - 1/2-inch diced
1/4 cup(s) milk (whole)
1/2 cup(s) butter
3/4 cup(s) sour cream
1 cup(s) Cheddar cheese (aged white) - grated
6 scallions - thinly sliced
1 pinch salt and pepper - to taste
Steps:
-Preheat the oven to 375 degrees.
-Scrub the potatoes and then rub them with the olive oil. Then coat them with the kosher salt.
-Bake at 375 degrees for 40 minutes or until easily pierced with a fork.
-While the potatoes are baking, heat up a saute pan for the bacon.
-When it is hot, add the bacon and saute for 1 minute. Then reduce the heat to low and slowly render the bacon until crispy; reserve.
-When they are ready, slice them in half and scoop out the potato. Leave a thin layer of potato on the bottom to keep them from tearing.
-Mix the potato in a bowl with the milk, butter, sour cream, cheddar, scallions and bacon.
-Season to taste.
-Divide the filling between the 6 potato halves.
-Place back in the oven for 5 minutes to warm.
