Steps: |
| -Preheat the oven to 375 degrees. |
| -Scrub the potatoes and then rub them with the olive oil. Then coat them with the kosher salt. |
| -Bake at 375 degrees for 40 minutes or until easily pierced with a fork. |
| -While the potatoes are baking, heat up a saute pan for the bacon. |
| -When it is hot, add the bacon and saute for 1 minute. Then reduce the heat to low and slowly render the bacon until crispy; reserve. |
| -When they are ready, slice them in half and scoop out the potato. Leave a thin layer of potato on the bottom to keep them from tearing. |
| -Mix the potato in a bowl with the milk, butter, sour cream, cheddar, scallions and bacon. |
| -Season to taste. |
| -Divide the filling between the 6 potato halves. |
| -Place back in the oven for 5 minutes to warm. |
