Golden Delicious or Fuji apples work best for this recipe.
Ingredients:
4 large apples - washed, dried and cored
1/2 cup(s) brown sugar
1/2 teaspoon(s) cinnamon (ground)
1/2 cup(s) raisins
4 teaspoon(s) honey - divided
Steps:
-Preheat oven to 350 degrees.
-Peel the skin of the bottom 1/3rd of the apple.
-Slice the bottoms of the apples to make them flat; place them in a 9 x 9-inch baking dish.
-In a small bowl, mix the sugar, cinnamon and raisins.
-Fill the inside of the apples evenly with sugar mixture; top mixture with 1 teaspoon of honey for each apple.
-Pour enough water in the pan to cover the bottom; place a piece of foil loosely over the apples.
-Bake at 350 degrees for 30 minutes.
-Remove from the oven and remove foil.
-Place back in oven, uncovered, and bake until apples are tender throughout, about 20-30 more minutes. You can test the apples with a paring knife.
-Serve with whipped cream or vanilla ice cream.
A 1/2 cup of walnuts can be added to the sugar mixture as well.
