Ingredients:
2 pound potatoes - red, russet or yukon gold
4 tablespoon(s) butter (unsalted) - softened
1/4 cup(s) heavy cream
1/4 cup(s) chicken broth - or vegetable broth (optional)
1 pinch salt and pepper - to taste
Steps:
-Peel or scrub the potatoes.
-Quarter the potatoes and cut into 1-inch chunks.
-Place chunks in a large saucepan; fill with water to cover the potatoes by 1 inch.
-Bring to a boil, reduce heat to low and simmer until potatoes are done (until a fork can easily poke through them), about 15-20 minutes.
-Drain the potatoes thoroughly and place into a large mixing bowl.
-Add the tablespoons of butter to the potatoes.
-Use a potato masher to mash or hand mixer to whip the potatoes.
-Fold in the heavy cream and seasonings with a large spoon or rubber spatula.
-If you like the potatoes smoother, add a tablespoon of broth at a time until desired consistency.
