Traditionally, a bouquet garni is tied at the bottom of the stems. We change it up with this one to use some of those kitchen scraps.
Ingredients:
2 leek leaves - outer green leaves
15 sprigs of flat leaf parsley - stems only
2 sprigs of thyme
2 bay leaves - dried
Steps:
-Trim the the leek leaves to 7-inches long.
-In one leek leaf, place parsley stems, thyme sprigs and bay leaves; wrap the leaf up.
-Wrap the other leaf around the first to make sure it is completely enclosed.
-Wrap the leaves tightly with an 18-inch piece of kitchen twine to form a packet; tie twine into a knot.
-Trim excess twine. Add to stalk or sauce.
