Traditionally, a bouquet garni is tied at the bottom of the stems. We change it up with this one to use some of those kitchen scraps. | Ingredients: | | 2 leek leaves - outer green leaves | | 15 sprigs of flat leaf parsley - stems only | | 2 sprigs of thyme | | 2 bay leaves - dried | |
Steps: | | -Trim the the leek leaves to 7-inches long. | | -In one leek leaf, place parsley stems, thyme sprigs and bay leaves; wrap the leaf up. | | -Wrap the other leaf around the first to make sure it is completely enclosed. | | -Wrap the leaves tightly with an 18-inch piece of kitchen twine to form a packet; tie twine into a knot. | | -Trim excess twine. Add to stalk or sauce. |
