Serve with ketchup or ranch dressing.
Ingredients:
2 cup(s) flour
2 eggs
1 tablespoon(s) vegetable oil
1 teaspoon(s) kosher salt
1/4 teaspoon(s) black pepper
1 pinch cayenne pepper
1 can(s) beer - 12 oz.
2 large onions (sweet) - peeled, sliced crosswise 1/2-inch thick
4 cup(s) vegetable oil - for frying, amount may vary
Steps:
-In a large bowl, whisk the flour, eggs, 1 tablespoon of oil, and seasonings together.
-Pour the beer into the bowl, and whisk together until lump-free.
-Separate the the onion rings.
-Heat the oil to 370 degrees.
-Working in batches, dip the rings into the batter and shake of any excess.
-Gently place in the hot oil and fry until golden brown, about 2-3 minutes.
-Turn and continue frying until both sides are golden brown, about 1-2 minutes.
-Remove and place on a paper towel to drain. Lightly sprinkle with salt, if desired.
-Continue with remaining onions.
