Artichokes Hearts Stuffed with Spinach and Bacon

Ingredients:
8 medium artichokes - cleaned to chokes (Learn How)
1 lemon - juice only
1 cup(s) bacon - cut in half
1 small onion - peeled and minced (Learn How)
1 garlic cloves - peeled and minced (Learn How)
1 pound spinach - julienned
1/2 cup(s) heavy cream
3/4 cup(s) Gruyere Cheese - grated
1 pinch salt and pepper - to taste
Steps:
-Preheat oven to 400 degrees.
-Follow the artichoke method. (Learn How)
-Clean the artichokes down to the chokes and leave in the lemon water.
-Heat a saute pan to medium-high. When it is hot, add the bacon. Stir for 30 seconds and then turn the heat to medium-low.
-Continue to slowly cook until crispy. Remove the bacon but keep the bacon grease in the pan.
-Add the onion and saute for 1 minute. Add the garlic and saute 1 additional minute.
-Add the spinach and stir constantly for even cooking.
-Once the spinach has shrunk down, add the cream. Reduce the cream until thick, then fold in the cheese.
-Remove from the heat. Season to taste.
-Once the spinach mix has cooled, stir in the bacon.
-Lay the artichoke bottoms out in a casserole dish.
-Top each one with a spoonful of the mixture.
-Place in the oven on 400 degrees for 5-10 minutes to reheat.
