Steps: |
| -Preheat oven to 400 degrees. |
| -Follow the artichoke method. (Learn How) |
| -Clean the artichokes down to the chokes and leave in the lemon water. |
| -Heat a saute pan to medium-high. When it is hot, add the bacon. Stir for 30 seconds and then turn the heat to medium-low. |
| -Continue to slowly cook until crispy. Remove the bacon but keep the bacon grease in the pan. |
| -Add the onion and saute for 1 minute. Add the garlic and saute 1 additional minute. |
| -Add the spinach and stir constantly for even cooking. |
| -Once the spinach has shrunk down, add the cream. Reduce the cream until thick, then fold in the cheese. |
| -Remove from the heat. Season to taste. |
| -Once the spinach mix has cooled, stir in the bacon. |
| -Lay the artichoke bottoms out in a casserole dish. |
| -Top each one with a spoonful of the mixture. |
| -Place in the oven on 400 degrees for 5-10 minutes to reheat. |
