Steps: |
| -Place rack in the middle of the oven, preheat oven to 200 degrees and line a sheet pan with parchment paper. |
| -Sift together sugar and cinnamon. Sift half of the mixture over the parchment paper. |
| -Thinly slice apples crosswise with a mandoline, about 1/16-inch thick. |
| -Arrange the apple slices, nearly touching, over the cinnamon mixture. |
| -Sift the remaining cinnamon mixture over the apples. |
| -Bake until pale golden and edges begin to crisp, about 2 hours and 15 minutes. |
| -Immediately peel chips off pan and cool on a rack. |
