This delicious take on an old Southern treat -- the cobbler -- is perfect topped with vanilla ice cream on a warm afternoon.
Ingredients:
3/4 cup(s) brown sugar - firmly packed
3 tablespoon(s) all-purpose flour
1/4 teaspoon(s) salt
1/4 teaspoon(s) nutmeg (ground)
1 dash cloves
2 tablespoon(s) lemon juice
7 medium pears - peeled, cored and thinly sliced
1 cup(s) all-purpose flour - (this and following ingredients are for topping)
2 tablespoon(s) sugar
1 teaspoon(s) baking powder
1/2 teaspoon(s) baking soda
1/2 cup(s) buttermilk
3 tablespoon(s) butter - melted
1 tablespoon(s) sugar - set aside for sprinkling
Steps:
-Preheat oven to 375 degrees.
-Combine first 6 ingredients (filling ingredients) in a large skillet.
-Stir in the sliced pears.
-Cook over medium heat, stirring gently, for around 5 minutes, or until the mixture is hot and bubbling.
-Remove mixture from heat and set aside.
-To make topping:
-Place flour, 2 tablespoons sugar, baking powder, and baking soda into a mixing bowl.
-Beat mixture on low for about 30 seconds.
-Add in buttermilk and melted butter, then continue to mix on low for another 30 seconds until well blended.
-Pour your filling mixture (still hot) into an 8- or 9-inch baking pan.
-Top evenly with large spoonfuls of the flour mixture.
-Sprinkle top lightly with 1 tablespoon of sugar
-Bake at 375 degrees for 30 to 35 minutes, or until the pears are bubbly and the topping is golden brown.
-Let cool for 10 minutes, then serve warm (vanilla ice cream topping is optional)
