2 eggs - separated

3 cup(s) vegetable oil - for frying
1 pound chanterelle mushrooms - cleaned and halved or quartered, depending on size
Steps:
-Place the egg whites in a separate bowl.
-Whisk together the egg yolks, flour, salt and beer until smooth.
-Add the chile flakes.
-Meanwhile, heat the oil in a deep-sided, heavy bottom pot to 375 degrees.
-Whisk the egg whites until peaks form.
-Gently fold the egg whites into the flour mixture.
-Toss the mushrooms into the batter and fry in batches.
