Combine the dry ingredients well and pour them out onto a clean work surface. | |||||

Place diced, chilled butter on top of the dry ingredients. | Begin gently mixing the two, making sure not to break up the butter any more than necessary. | ||||

There should be large pieces of butter remaining. | Add the liquid and mix by hand just until it is incorporated. Again, make sure to disturb the large pieces of butter as little as possible. | ||||

Use a bench scraper to mound the flour, butter and liquid dough all together. | Pat the dough together to form one cohesive dough. This is not to say that the dough will be smooth. Adversely, the dough should remain a bit crumbly looking. | ||||

Wrap dough in plastic wrap and chill it for at least 30 minutes. | Remove the dough from the plastic and place on a lightly floured surface. See the pictorial "Blitz Puff Pastry Part 2" for instruction on rolling out the dough. | ||||
