Place the vanilla bean onto a cutting board. Put the tip of a paring knife into the center of the bean pod.

Run your knife carefully down the center of the bean.

Use the tip of the knife to scrape the millions of tiny seeds from inside the bean pod.

The seeds can be used to flavor many dishes, savory and sweet. The bean pods can now be steeped in liquid to flavor it or covered in sugar and left for days or weeks for vanilla sugar.
