To prepare each souffle dish, you will need some tabs of softened butter and some sugar. This is for a sweet souffle. If you are preparing the dish for a savory souffle, you will want to use cheese or fine breadcrumbs. | ||

Rub the inside of the dish thoroughly with a tab of the softened butter. | Make sure that you have covered the entire inside of the dish, especially the corners. | |

Pour a liberal amount of sugar into the dish. | Shake the sugar around the bottom of the dish. | |

Turn the dish on the side. | Place your hand on the lip of the dish to keep the sugar from pouring out. | |

Turn the dish against your hand to cover the sides completely with sugar. | Pour the excess sugar out into another souffle dish waiting to be prepared or discard the sugar. | |
