To release the cloves from a bulb of garlic, place the garlic on a cutting board. Place your hand on the root end and gently apply pressure straight down.
This will crack the papery white skin away from the bulb and separate the cloves.
Discard the loose bits of the outside of the garlic and the root end.
To remove the peel from a clove, place one under the center of a knife blade with the sharp blade facing away from you.
Carefully use the heel of your hand to smack the knife blade.
This will release the papery skin from the clove.
Roughly chop the garlic.
Season with coarsely ground sea salt.
Using a back and forth stroke, continue to chop the garlic into fine pieces.
