To release each clove from a bulb of garlic, put the garlic onto a cutting board. Place the heel of your hand on the root end of the bulb.
Place your other hand on top and gently press straight down.
This pressure will release each clove from the root end.
Discard the papery white skin and the root end.
To remove the peel from a clove, place one under the center of a knife blade with the sharp blade facing away from you.
Carefully use the heel of your hand to smack the knife blade.
This will release the papery skin from the clove.
