Cut the fennel just where the bulb turns from white to light green.
Turn the bulb onto the cut side and cut through the stem end.
Place your hand on top of the fennel half to steady it.
Make several horizontal cuts equally spaced apart. Cut almost all the way through; make sure to leave the stem end in tact to hold all of the layers together.
Make vertical cuts equally spaced apart. Again, make sure to leave the stem end in tact.
Starting at the cut end, make equally spaced cuts across the flat front.
This will release the fennel dice. Cut the other half the same way.
