A Step-by-Step How To: Carrot - Julienne/Brunoise Diced
Trim the ends from the carrot.
Peel carrot all around. Use the peeler to create one flat side by swiping the peeler down the same side 3-4 times.
Resting the carrot on the flattened side, cut it just where the thick end tapers. Set the pointed end to the side.
Once again, rest the thick end on the flattened side to keep it from rolling. Square all four sides by cutting off the rounded edges.
You will now have a square piece.
Cut 1/8" thick, rectangular planks from the square piece.
Cut the planks into 1/8" thick strips.
These strips are julienne dimensions.
Cut the strips into 1/8" squares. These squares are brunoise dimensions.
These are julienne and brunoise cuts.
