What to Cook for Dinner Tonight

Need a little inspiration for dinner?

Lately, when planning meals, I look for something quick and I look for something healthy.  Here’s a delightful meal that meets both of those standards and will leave a satisfied smile on your face:

Tilapia with Mango Salsa and a Napa Cabbage Salad

The tilapia is the only part of this meal that needs to be cooked.  You can find tilapia fillets at the seafood counter or with the frozen fish (they take no time to thaw).  Saute it in a pan (with a little butter or olive oil) over medium heat for 2-3 minutes on each side.  Or you can bake it on 350 degrees for 8-10 minutes in a lightly greased pan.  Make sure the fish is cooked through before you serve it.

1.  Serve the the salsa over the fish with the salad on the side

2.  SALAD - Toss the salad with some of the mango salsa and place the fish on top

3.  FISH TACOS - Place sliced tilapia in tortillas and top with the napa cabbage salad or mango salsa or both
